Chicken Tikka Masala

Ingredients
  • Boneless, skinless chicken thighs
  • Marinade
    • Plain yogurt
    • Lemon juice
    • Fresh garlic
    • Fresh ginger
    • Garam masala powder
  • Pan Sauce
    • ghee or clarified butter
    • Vegetable oil
    • Chopped onions
    • Fresh garlic
    • Fresh ginger
    • Cumin
    • Roasted coriander
    • Chili powder
    • Heavy cream
    • Tomato sauce
    • Tomato paste
    • Fresh coriander (cilantro)

Instructions
  • Cut up boneless skinless chicken thighs and marinate them for at least an hour in the mixture.
  • Brown them in a skillet with some oil and remove them
  • Add ghee or clarified butter to the pan, and some oil
  • Add chopped onions and deglaze the pan
  • Cook the onions down then add the fresh garlic, fresh ginger, cumin, roasted coriander, and chili powder
  • Cook that all together until it is fragrant…
  • Add chicken back into the pan
  • Add heavy cream, tomato sauce and tomato paste and let simmer for 15-20 minutes
  • Top at the end with fresh coriander (cilantro)
  • Serve with basmati rice.
